Daily Operations • Food Running (1st priority and the most important) • Must know table and seat numbers • Must know dishes and be able to explain them to the appropriate guest • Understands how “the pass” works and able to read dockets correctly • Help refill waters • Maintain the level of cleanliness and high standard of service while delivering food • Keep the restaurant and brew bar clean • Help clean and reset tables without a manager or server asking you to do so • Complete opening, ongoing, and closing task • Organize staff zones • Restock stations • Check toilets every 30 minutes • Polish glasses and cutlery • Organize delivery areas • Complete weekly deep cleans
